Vegetarian Yaki Udon

Yaki udon is a simple and scrumptious Japanese stir fry recipe which uses fresh vegetables and udon noodles

Serves: 4


Vegetable oil
270g of dried udon noodles (we use Hakubaku Organic Udon Noodles)
100g mushroom (button or cup variety), sliced
1 carrot, julienned
1 red capsicum, chopped into strips
1 bunch of baby bok choy or choy sum, chopped
2 cups of green cabbage, shredded
3 spring onions, sliced
3 tablespoons of soy sauce
2 tablespoons of mirin
2 tablespoons of oyster sauce (substitute with vegetarian oyster sauce or Worcestershire sauce if vegetarian)
1 teaspoon sesame oil


    1. Cook the udon noodles according to the packet instructions then drain and set aside
    2. Mix together the soy sauce, mirin, oyster sauce and sesame oil and set aside
    3. Coat a large wok with oil and heat on medium. Add in the white parts of the spring onion, carrot, capsicum and mushroom. Cook for 5mins, stirring regularly. Then, add in the Asian greens and green cabbage and cook for a further 3-4mins, or until wilted
    4. Pour in the sauce and mix to combine. Cook for a further 3-4mins or until the veggies are tender and the mixture is well combined
    5. Serve hot, topped with the green parts of the spring onion
