Kimchi Tofu Bake

Get your kimchi on with this flavorful Korean recipe

Serves: 3

Ingredients

300g firm tofu, cut into large cubes
150g green beans, chopped
200g canned baby corn
1 head of broccoli, chopped
½ cup of sesame seeds
200g kimchi
1 small piece of ginger, grated
2 cloves of garlic, crushed
2 tablespoons of rice vinegar
2 tablespoons of soy sauce
1 bunch of coriander, leaves separated from stalks
Rice, to serve

Method

  1. Pre-heat oven at 220 C
  2. Place kimchi, ginger, garlic, rice vinegar, soy sauce, coriander stems and 50ml of water into a blender and blend until smooth. Mix marinade together with the tofu and chill for 30mins
  3. Place the green beans, baby corn and broccoli in baking dish and mix
  4. Put the sesame seeds on a plate and, one at a time, roll the tofu pieces in the sesame seeds. Set aside
  5. Mix the remaining marinade through the veggies and place the tofu on top
  6. Bake the dish for 20-30mins, or until the tofu is golden and the vegetables are cooked through
  7. Serve hot, topped with coriander and a side of rice
