Sweet Potato & Turnip Gratin

A creamy, cheesy delicious winter side

Serves: 4


500g turnips (about 2-3 turnips), pealed and sliced
500g sweet potatoes (about 1.5 medium sweet potatoes), pealed and sliced
1 brown onion, sliced
4 cloves of garlic, crushed
300ml cream
50g parmesan cheese, shaved
1 teaspoon of fresh thyme, leaves picked
Salt and pepper


  1. Pre-heat the oven to 160 C and spray a medium-sized casserole dish with oil
  2. Place the cream in a small saucepan and bring to a simmer on medium heat. Add in the thyme, garlic and onion and simmer for a further 5 mins, stirring occasionally
  3. Layer half of the sliced vegetables in the casserole dish. Pour in half the cream mixture and top with half the parmesan
  4. Layer the rest of the vegetables and pour over the remaining cream mixture. Top with the remaining parmesan
  5. Cover the dish with foil and bake for 30mins. Remove the foil and bake for a further 15-20mins or until the top is golden and the vegetables are cooked through
