Simple Soba Noodle Salad

Flavoursome and simple noodle salad which may be served hot or cold
Difficulty Level: Easy
Serves: 4


Canola oil, for frying
180g dried soba noodles
200g snow peas, chopped
2 carrots, sliced
1 green capsicum, sliced
100g baby spinach
½ red onion, sliced
200g firm tofu, cut into squares (substitute with meat if preferred)
1 tablespoons red miso paste
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 tablespoons olive oil
1 knob ginger, grated
1 teaspoon caster sugar
Handful of coriander


  1. Cook noodles in a saucepan of boiling water. Once cooked, drain in colander
  2. Stir together miso paste, vinegar, soy sauce, olive oil, ginger and caster sugar until sugar dissolves
  3. Coat frypan with canola oil and fry tofu until lightly browned (approx. 5 minutes). Remove from frypan
  4. Fry snow peas, carrots, capsicum and onion until cooked through. Add spinach until slightly wilted
  5. Combine the sauce with the tofu and cooked veggies
  6. Serve topped with shredded coriander
