Quinoa Carrot Falafels

These falafels are easy to make and incredibly delicious

Makes: 10-12


Vegetable oil, for frying
200g carrot, peeled and grated
1 cup of quinoa flakes
1 handful of coriander leaves, shredded
1 spring onion, sliced thinly
1 400g can of lentils, drained and rinsed
4 cloves of garlic, peeled
1 teaspoon of smoked paprika
Aioli, fresh lime and pita bread, to serve


  1. Place the carrot, quinoa, coriander, spring onion, lentils, garlic and paprika in a food processor or blender and process until combined
  2. Take 2 tablespoons of the mixture and roll together to form a ball. Repeat until all of the mixture has been used
  3. Pour vegetable oil into a large saucepan until it is about 5cm deep. Heat on medium
  4. Cook the falafels in the oil in small batches (4 or 5 at a time). Cook for about 4-5 minutes or until golden and crunchy and then drain on a paper towel lined plate
  5. Serve hot with a side of aioli, fresh lime and pita bread
