Mushroom & Blue Cheese Gnocchi

Mix it up with an easy cheesy week-night gnocchi recipe
Difficulty Level: Easy
Serves: 2


Olive oil, for frying
Knob of butter, for frying
500g gnocchi (packaged or home-made)
1 brown onion
3 garlic cloves
200g cup mushrooms
100g creamy blue cheese, shredded
Handful of parsley, to serve


  1. Bring a saucepan of water to boil and cook the gnocchi until they float to the surface. Drain and set aside
  2. Meanwhile, heat oil and butter in a frypan on medium. Add onion, mushroom and garlic and fry for 5mins, or until lightly browned
  3. Add gnocchi to the frypan and stir through. Continue to cook for 2-3mins or until gnocchi is lightly toasted
  4. Serve warm, topped with blobs of blue cheese and parsley
