Moroccan Mushrooms & Cous Cous

Get spicy with this super easy version of Moroccan mushrooms
Difficulty Level: Easy
Serves: 4


Olive oil, for frying
1 red onion, sliced
3 cloves of garlic, diced
300g button or cup mushrooms, quartered
2 tomatoes, diced
½ teaspoon of cinnamon
1 teaspoon of Moroccan spices
1 tablespoon of tomato paste
250g cous cous
30g dried apricots, diced
½ cup of fresh parsley, shredded


  1. Cook the mushrooms. Cook the onion and garlic in a saucepan over medium heat until fragrant. Add in the mushrooms and cook for 5mins. Add in the spices, tomatoes and tomato paste and cook on low heat for a further 10-15mins, or until the mushrooms are well down
  2. Cook the cous cous. Prepare the cous cous in accordance with the package instructions. Mix in the diced apricots and fresh parsley
  3. Serve hot, by creating a layer of cous cous and topping with the mushroom mixture
