Mixed Veggie Pilaf

A versatile and wholesome one-pot recipe featuring cauliflower, carrot, corn and peas

Ingredients

Olive oil
Salt and pepper
1 brown onion, diced
½ cauliflower, cut into small florets
1 ½ cups basmati rice
6 cloves of garlic, diced
2 teaspoons curry powder
1 teaspoon cumin
½ teaspoon brown sugar
2 cups vegetable stock
2 medium carrots, using a vegetable peeler
1 cup corn kernels
1 cup peas
Chopped coriander (to serve)
Lemon slices (to serve)

    Method

    1. Coat a large saucepan with olive oil and heat on medium. Add in the cauliflower florets and onion and sauté for 5mins, or until softened. Remove the cauliflower from the saucepan and set aside
    2. Add in the rice, 2 tablespoons of olive oil, garlic, curry powder, cumin, sugar and a pinch of salt and pepper. Stir well to combine
    3. Pour in the vegetable stock and 1½ cups of water. Also, mix in the cauliflower and carrot and bring the mixture to a boil. Reduce the heat to low, put the lid on the saucepan and allow the mixture to simmer for 15mins
    4. Mix in the corn and peas and, if needed, a little more water. Let simmer for an additional 10mins, stirring occasionally
    5. Serve hot, topped with chopped coriander and lemon slices
