Lentil, Feta and Red Onion Salad

This deceptively simple recipe is sure to wow your family and friends

Ingredients

Canola oil, for frying
1 red onion, sliced
1 lemon, juiced
2 tablespoons of olive oil
2 400g cans of lentils
½ cup of mint, shredded
½ cup of coriander, shredded
1 red chilli, sliced (optional)

Method

  1. Pre-heat oven at 200 C
  2. Combine the lemon and olive oil
  3. Cut the block of feta into two halves
  4. Place each piece of feta onto a sheet of aluminium foil and top with red onion and chilli (if using). Drizzle with the lemon olive oil mixture and pull up the sides of the foil to form ‘boats’
  5. Place on a baking tray and bake for 15-20mins or until golden
  6. Meanwhile, place the lentils on a flat baking tray (lined with baking paper) and bake for 15-20mins or until crispy. Remove, cool and mix through herbs
  7. To serve, create a layer of lentils and top with feta and red onion. Drizzle with olive oil
