Lemon Broccolini & Gnocchi Traybake

Everyone loves a good traybake and this one takes gnocchi to the next level
Difficulty Level: Easy
Serves: 4


1 bunch of broccolini
1kg of gnocchi
2 lemons, 1 sliced and 1 halved
3 cloves of garlic, diced
1 tablespoon of fennel seeds
50g of parmesan, shaved
Handful of oregano, to serve
Olive oil


  1. Preheat the oven at 220 C
  2. Cut the broccolini into pieces (around 3-4cm in length)
  3. In a large bowl, combine the gnocchi, broccolini, fennel seeds, sliced lemon and garlic and drizzle well with olive oil
  4. Tip the gnocchi mixture onto 2 baking trays and smooth it out to form a single thin layer. Bake for around 15-20mins, or until the gnocchi is golden and the broccolini is cooked through
  5. Serve hot, topped with parmesan, oregano and a drizzle of olive oil
