Hearty Minestrone Soup

An easy and tasty way to clean the fridge and get your 5 a day!

Serves: 4-6


Olive oil
1 brown onion, diced
2 carrots, chopped finely
2 ribs of celery, chopped finely
2 tablespoons of tomato paste
1 zucchini, quartered and chopped
4 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of smoked paprika
800g can of diced tomatoes
400g can of cannellini beans
2 bay leaves
3 cups of vegetable stock
2 cups of shredded leafy greens (spinach, kale, silverbeet or brussels sprouts)
Grated parmesan and fresh bread, to serve


    1. Coat a large saucepan with olive oil and fry the onion, carrot, celery and tomato paste for 10mins
    2. Add in the zucchini, garlic, oregano, basil, paprika, diced tomatoes, cannellini beans, bay leaves and stock and mix well. Bring the mixture to a boil and then reduce heat to a simmer
    3. Cook for 15mins and then add in the greens. Simmer for a further 5-10mins, or until the greens are tender
    4. Discard the bay leaves and season with salt and pepper (to taste)
    5. Serve hot, topped with grated parmesan and a side of fresh sourdough bread (we recommend Organic Bread Bar’s Multigrain Sourdough Loaf)
