Healthy Zucchini Bread

Whoever said bananas are the only thing you can turn into ‘bread’?
Difficulty Level: Easy
Makes: 1 loaf

Ingredients

2 cups of grated zucchini (approximately 2-3 medium zucchinis)
½ cup of brown sugar
50g of butter, melted
2 eggs
1 ½ cups of self-raising flour, sifted
½ cup of rolled oats
½ cup of milk
½ teaspoon of cinnamon
Chopped walnuts (optional)

Method

  1. Pre-heat the oven to 180 C and grease a 25cm x 14cm loaf pan
  2. Mix the sugar and butter together in a medium mixing bowl, making sure that the mixture is smooth
  3. Next, whisk in the eggs and stir in the oats, cinnamon and walnuts (if using)
  4. Stir in half of the self-raising flour, adding in some milk at the same time. Once combined, stir in the second half of the flour and milk
  5. Finally, mix in the zucchini so that the mixture is just combined. Be careful not to over-mix
  6. Pour to batter into the pan and cook for 60mins or until cooked through
  7. Remove and cool before serving
