Halloumi & Capsicum Pide

Not your average pide - swap the meat for halloumi and veggies and you’ve got yourself a winner!

Ingredients

For the Dough:
2 cups of all purpose flour
14g of dried yeast (2 7g packets)
1 cup of warm water
3 tablespoons of olive oil
 
For the Filling:
1 red onion, diced
200g halloumi, chopped into small pieces
1 red capsicum, diced
1 green capsicum, diced
½ cup parsley, shredded
1 teaspoon of cumin
½ teaspoon of smoked paprika
¼ teaspoon of cinnamon

Method

  1. Make the dough. Place the yeast in a small bowl and pour over ½ cup of warm water. Stir the mixture until the yeast has dissolved and then set aside for 5mins
    Place the flour in a large bowl and make a well in the centre. Pour the oil, yeast mixture and remaining warm water into the well. Mix together to form a dough
    Turn the dough out onto a lightly floured surface and knead for 3-5mins, or until soft and smooth. Place the dough in a large bowl, cover and set aside for at least 1 hour, or until it has doubled in size
  2. Pre-heat the oven at 200 C
  3. Make the filling. Cook the onion, garlic, capsicum and spices in a fry pan on medium heat until softened (~10mins). Add in the halloumi and parsley and set aside
  4. Assemble and cook. Divide the dough into 2 pieces, rolling each piece out into a long thin oval shape. Place the dough onto a greased tray and top each piece with half of the mixture, leaving a 2cm border. Bake for 20-25mins, or until the pastry is golden and topping cooked
