Halloumi & Capsicum Fajitas with Guacamole

A tasty vegetarian twist on a classic tex mex recipe

Ingredients

Canola oil, for frying
1 green capsicum, sliced
1 red capsicum, sliced
250g block of halloumi, sliced
1 teaspoon garlic salt
½ teaspoon cumin
1 teaspoon paprika
½ teaspoon chilli powder
1 brown onion, sliced
½ red onion, diced
1 avocado
1 lime (may be substituted with lemon if required)
1 handful of coriander, shredded
8 small tortillas
Sour cream, to serve

Method

  1. Fry brown onion in a saucepan on medium heat until browned. Add in capsicum, garlic salt, cumin, paprika and chilli powder and cook until soft and fragrant. Set aside, clean saucepan
  2. Coat frypan with oil and heat on high for 1 min. Add halloumi and fry for 1 min on either side or until browned. Remove from frypan and drain on a paper towel lined plate
  3. For guacamole, scoop out avocado into a bowl. Add red onion, lime juice and coriander. Mash together with a fork until desired consistency is reached
  4. Serve by layering halloumi, capsicum mixture, guacamole and sour cream onto the tortillas
