Easy-as Banana Fritters

Served with a side of ice-cream, these fritters are super easy and super tasty!

Serves: 4


Vegetable oil, for frying
4 large over-ripe bananas, each peeled and chopped into 3 pieces
1 cup of plain flour
2 cups of self-raising flour
1 ½ cups of water
½ teaspoon of bicarbonate of soda


  1. Sift the self-raising flour and bicarb soda into a bowl. Pour in the water and mix to form a smooth batter
  2. Pour the oil into a small saucepan to a depth of about 4cm. Heat on high
  3. Take a piece of banana and lightly coat it in plain flour. Then, dip it into the batter and pop it in the saucepan. Repeat until the saucepan is full (you should be able to cook 3 or 4 pieces at a time). Cook for a couple of minutes on either side or until golden brown, then set aside to drain
  4. Repeat for the remaining banana pieces
  5. Serve hot with a side of ice-cream and topped with chocolate sauce and chopped peanuts (optional)
