Dukkah Potato, Broccoli & Halloumi Salad

This is anything but your average potato salad!

Ingredients

Olive oil
500g white potatoes, chopped into small cubes
1 large head of broccoli, chopped into small pieces
200g cherry tomatoes, halved
1 red onion, sliced
180g halloumi, sliced
2 tablespoons pistachio dukkah
1 lemon, juiced
Red wine vinegar

Method

  1. Pre-heat oven at 220 C
  2. Combine potatoes with dukkah in a baking tray and drizzle with olive oil. Bake for 20mins and then add in the broccoli. Bake for a further 10-15mins or until cooked through
  3. Meanwhile, cook halloumi. Coat frypan with oil and heat on high for 1 min. Add halloumi and fry for 1 min on either side or until browned. Remove, cool and cut into smaller pieces
  4. To serve, combine potato and broccoli mixture with cherry tomatoes and onion and top with halloumi. Drizzle with olive oil, red wine vinegar and lemon juice
