Creamy Potato & Leek Soup

A classic comfort dish which will leave you feeling warm and satisfied

Serves: 3


20g butter, for frying
1 leek, white and light green parts chopped
500g potato, peeled and chopped into small pieces
3 cloves of garlic, diced
3 cups vegetable broth
1 bay leaf
2 sprigs of fresh thyme
½ cup of cooking cream
Salt and pepper
Chives, fresh or dried, to serve
Fresh bread, to serve


  1. Melt the butter in a large saucepan over medium heat. Add in the leek and garlic and cook until it is soft and wilted (about 5-10mins)
  2. Add in the potatoes, broth, bay leaf, thyme and salt and pepper (to taste). Bring the mixture to a boil and then cover the pot and reduce to a simmer. Simmer for 15-20mins, or until the potatoes are very soft
  3. Then, remove the thyme and bay leaf and blend the soup to reach your desired consistency / thickness. Stir in the cream and simmer for a further 2-3mins
  4. Serve hot, topped with fresh chives (optional) and a side of fresh bread
