Creamy Celery & Broccoli Soup

A warm winter dish which is as hearty and healthy as it sounds

Serves: 3


Olive oil
1 bunch of celery stalks (around 5-7 stalks)
2 broccoli heads
750ml of vegetable stock
3 cloves of garlic, diced
1 brown onion, diced
60ml of cooking cream
Handful of shaved parmesan cheese, to serve
Handful of shredded parsley, to serve
Salt and pepper, to season


  1. Slice the celery stalks into small pieces and chop the broccoli heads into small florets
  2. Heat 2 tablespoons of oil in large saucepan on medium heat and fry the onion and garlic until fragrant
  3. Add in the celery, broccoli and vegetable stock, cover the saucepan and bring the mixture to a boil for a couple of minutes
  4. Reduce the heat and let the mixture simmer for 15-20mins, or until the celery and broccoli is soft
  5. Using an immersion blender, or a regular blender, blend the soup to the desired consistency (we like ours thick!)
  6. Add in the cream, season with salt and pepper and continue to stir over medium heat for a couple of minutes
  7. Sprinkle with parmesan and parsley to serve
