Classic Veggie Omelette

A versatile recipe for a lazy weekend brunch or a speedy weeknight dinner
Difficulty Level: Easy
Makes: 1 omelette 


Canola oil, for frying
½ brown onion, sliced
100g cup mushrooms, quartered
½ small sweet potato, chopped into 1cm pieces
1 small bunch of broccolini, chopped into 1cm pieces
Handful of mozzarella cheese
3 eggs
Handful of coriander leaves (to serve)
Handful of crumbled feta (to serve)
Salt and pepper (to serve)


  1. Heat frypan on medium heat. Sautee onion until fragrant. Add in mushrooms, sweet potato and broccolini and cook until soft and slightly charred. Remove from pan and clean frypan
  2. Crack eggs in a bowl and scramble using a fork
  3. Heat frypan on medium heat. Pour eggs into frypan and fry for 3-5mins or until semi-cooked
  4. Place veggies on one half of omelette and sprinkle with cheese. Using a spatula, carefully fold to form omelette and slide onto a place
  5. To serve, garnish with coriander, feta and salt and pepper
