Beer Battered Onion Rings & Aioli

Win over your friends with this naughty (but delicious) recipe

Serves: 4


For the Onion Rings:
1 large brown onion
1 cup of all purpose flour
1 teaspoon of paprika
½ teaspoon of garlic powder
¾ cup of pale ale beer
Vegetable oil, for frying
Salt and pepper
For the Aioli:
2 cloves of garlic
1 egg yolk
1 teaspoon of lemon juice
½ teaspoon of Dijon mustard
¼ cup of olive oil
3 tablespoons of vegetable oil


For the Onion Rings:
  1. Whisk together ¾ cup of flour, paprika, garlic powder, salt, pepper and beer. Let batter rest at room temperature for 10 mins
  2. Meanwhile, peel the onion and cut it horizontally to form 2cm thick rings. Separate onion rings and toss with the remaining flour
  3. Pour oil in a large saucepan until ~5cm deep. Heat the oil on high
    In batches, dip the onion rings in the batter and drop them into the oil.
  4. Fry them on each side for 1-2 mins or until brown and crisp. Serve hot
For the Aioli:
  1. Peel and mash the garlic to a paste
  2. Whisk together the yolk, lemon juice and mustard in a bowl
  3. Combine the oils and then add them to the yolk mixture a few drops at a time, whisking constantly, until all of the oil is incorporated and the mixture reaches the desired thickness
  4. Whisk in the garlic and chill until ready to use
